Yoghurt pearls

Esférico de Yogur
Yoghurt pearls | SOC CHEF
  • Ingredients
    • 250g Yoghurt
    • 25g Tpt
    • 1.000g Mineral water
    • 5g Alginate SOC CHEF

Process

  • Dissolve the Alginate with water with hand blender
  • Let stand in cold for 24 hours
  • Mix the yoghurt with the TPT syrup
  • Using a spoon, dose the yoghurt and pour it into the Alginate bath
  • Leave the pearls in the bath for 4 minutes
  • Take out of the bath using a spherification spoon
  • Keep them into the flavoured TPT mixture
