Description


The name Tonka comes from the Tupi, the language of French Guyana's Tupi.
The cumaru, a gigantic tree that feeds the green lung of the earth, produces orange fruits whose shape resembles that of a mango.
In a state of maturity, this fruit offers red and oblong kernels the size of an almond that dry for almost a year and then soak in strong alcohol for 24 hours.
After this long process, they dry again and then turn black and wrinkled.

Properties:
Bitter almond, vanilla, toffee and coffee aromas, with hints of tobacco.
Its flavor is warm and greedy, with a slight bitterness similar to cocoa.

Applications:
A warm and very subtle spice used either grated or infused with fish, vegetables, seafood and meat.
A key ingredient in pastry and in confectionery combining very elegantly with chocolate.
