Tomato angel hair
  • Ingredients
    • 1 L Tomato juice
    • 10 g Kappa Gum SOC CHEF
    • q.s. Salt

Process

Mix the ingredients all together. Heat them at 100ºC.
Pour the mix into a high and narrow mold. Put in the fridge at least 3 hours.
Once it is gelified, use a grater to obtain angel hair.

 

Technical imput

Kappa Gum is an almost instantaneous gelling agent.
You can get products with a firm texture and an excellent presentation.
