Description


The Timur berry, harvested by farmers in the Nepalese mountains, has a lemongrass aroma and grapefruit notes.
This Nepalese berry is harvested in small trees endemic to the Zanthoxylum armatum species.
They develop in the wild in the Mahabharat range.

Its fresh and acidic notes give it the nickname "Grapefruit pepper".
This small berry is the base species of the known populations in the Teraï, a region of the "wetlands" in southern Nepal.
It is the birthplace of the Buddha, and there are tharu villages with their earthen houses and thatched roofs.
These thorny shrubs develop fully at more than 2000 m altitude.

Delicate flowery and fruity flavors, a little spicy.
Ideal in many sweet and savoury recipes.

Applications:
Its exotic notes with aromas of candied lemon and citronella combine perfectly with scallops, a good lobster and its citrus butter, chicken meat or a simple citrus salad.
Crushed or infused in its dishes, it enhances crustaceans, fish and chocolate desserts.
