Origin:
Sucrose.

Properties:
Emulsifier in aqueous media or alcohol.
Creates very stable cold or hot air foams (keeps the structure for about for 30 minutes).

Mode of use:
Dissolve hot or cold, in water and/or alcohol.

Technical note:
Does not add flavor.
Resistant up to 70ºC.
Insoluble in fat.

Recommended dosage: 7 g to 15 g per L.
