Description


Szechuan berries, which were already renowned in ancient China, blend citrus and spicy flavors.
Cultivated in Asia, the Szechuan berry is named for its preferred region, Szechuan (or Sichuan), in China.

The reddish foliage shrub creates small berries.
First green, they turn red and then darken with maturity.
Then they open themselves to drop the two seeds they contain... and offer us their tasty wrapper!

The Szechuan berry was already prized in ancient China for its mixture of freshness and heat, potency and aphrodisiac properties; it is even said to have perfumed the walls of the "pepper rooms" of Chang' an Palace with its captivating scent.
It made its appearance in Europe in the 13th century when Marco Polo imported it into Venice, where he seduced cooks and perfumed all the dishes, before falling into culinary oblivion.
It was in the 19th century that the Szechuan berry came back strongly.

Applications:
Perfect when combined with fish, foie gras, tropical fruits and not te be missed with chocolate.

Mode of use:
Szechuan berries are used whole, ground, infused, crushed.
