Provides a higher protein concentration, and allows to give more structure to the masses.
Gelling agent, aerating agent and emulsifier.

Mode of use:
Ideal for vegan and vegetarian preparations.
Add in cold and mix with hand blender.

Technical note:
It allows to make emulsions between fats and water.
When we work with alcohol, we get gellification in cold.
Neutral taste.
Brown color.

Recommended dosage: 40 g to 80 g per L.
