Origin:
Vegetable.

Properties:
Thickener and/or gelling agent (with sugar and acid).

Mode of use:
Add with sugar at about 40°C and bring to a boil.
Ideal for making thick marmelades and jams with pieces of fruit, since the fruit is in suspension.

Technical note:
Non-thermo-reversible.
Suitable for freezing.
Gelling action is faster than other pectins.

Recommended dosage: 2,5 g to 5 g per kg.
