Thermoreversible gelling agent.
Use to gel emulsions in hot, with high viscosity in cold.
Powerful gel that reacts to heat, ideal for vegetable burger.
Frequently used in vegan food.

Origin:
Vegetable Methilcellulose.

Properties:
Gelling agent that allows cold mixing, and is activated from 60ºC.
Binding agent.

Mode of use:
Mix with hand blender while cold. Rest for 1 hour for good hydration.
Ideal for vegan burgers, widely used in vegan food.

Technical note:
Great stability, does not release liquids when cooling.

Recommended dosage: 7 g to 30 g per L.
