Description


Natural polysaccharide extracted from locust bean gum. It is used as estabilizer.

Origin:
Vegetable, carob tree.

Properties:
Stabiliser.
Thickener.
Gelling agent.

Mode of use:
Dissolve at 80-90ºC.

Technical note:
Has more strength in a dairy-based product.
Many often used in combination with other gums.

Recommended dosage: 0,5 g to 10 g per L.
