Description


100% chicory inulin, thickener and stabilizer, thickener in cold and hot. Bulking agent.
Used to make creams without eggs and ice cream.

Origin:
Vegetable, 100% chicory root.

Properties:
Thickener and cold stabiliser.
Emulsifier and stabilizer for ice-creams.
Perfect for sugar free preparations.
Gives texture and a sweet taste.

Mode of use:
Add the product slowly.
Mix with hand blender for 5 minutes.
Egg substitute in gelatins and fat substitute in some preparations.

Technical note:
It is recommended to let rest for 12 hours for a perfect hydration.
Can be whipped with liquid cream to maintain creaminess.
Insoluble in fat.
It can be heated once textured up to 50ºC.
Once textured, it allows freezing.

Recommended dosage: 50 g to 300 g per L.
