Description


The product can be used in aqueous, dairy, or fruit media.
It is however standardized in milk medium, to ensure a constant reactivity in cold-prepared aerated dairy desserts.
A complete dissolution can be obtained in cold or hot conditions.

Origin:
Vegetable, dairy.

Properties:
Emulsifier in aqueous media or alcohol for stable emulsions.

Mode of use:
Dissolve cold. Mix with hand blender.
Add 2 gas charges for use in whipping siphon.

Technical note:
The higher the dosage, the higher the structure.

Recommended dosage: 20% - 25%.
