Description


Gelling agent in hot supporting up to 80ºC.
Clean cut, thermoreversible and firm.

Origin:
Glucose.

Properties:
For products that are baked or can be heated with the torch.
Completely transparent and flexible gels.
Can be dehydrated.

Mode of use:
Dissolve cold in the product to be gellified. Boil to activate.
Transparent and flexible gels and glazes. Spherifications.

Technical note:
Provides stability to fillings of baked products (i.e. a filled puff pastry).

Recommended dosage: 5 g to 20 g per L.
