Dietary fiber with thickening, stabilizing and emulsifying properties.

Origin:
Vegetable, acacia.

Properties:
Stabiliser. Thickener. Emulsifier.
Improves stability and flexibility.

Mode of use:
Dissolve in cold aqueous media.
To get glossy glazes and toppings.
Waterproofing agent for biscuits, cookies, crisp baked products.
Dissolve in cold in the product to be gelled and heat up to 80ºC to activate.

Technical note:
Insoluble in alcohols and fats.
Wraps flavours and aromas.

Recommended dosage: 10 g to 300 g per L.
