  • Ingredients Methil base
    • 3g Methil SOC CHEF
    • 100g Water
  • Ingredients Meringue
    • 20g Sugar ECO SOC CHEF
    • 10g Trisol SOC CHEF
    • 0,5 salt
    • 40g Methil base
    • 300g water
    • 20g Albumin SOC CHEF
    • 0,8g Xanthan gum SOC CHEF
    • Freeze-dried raspberry SOC CHEF

Process

  • Mix the ingredients
  • Mix the water with the Methil base
  • Add the dry ingredients progressively
  • Let it in fridge 8h
  • Beat the mix
  • Dry it at 50ºC aprox. 8h
