  • Ingredients
    • 250g Mango pure
    • 1,8g Alginate SOC CHEF
    • 5g Calcic SOC CHEF
    • 1.250g Water
    • 1,3g Citrate SOC CHEF

Process

  • Mix the Citrate SOC CHEF with 250g of water
  • Add Alginate SOC CHEF and mix
  • Once cold add the mango and mix
  • Strain the mixture and let it rest for about 20 minutes
  • Dissolve Calcic SOC CHEF with 1000g of water
  • Let stand for 2 minutes to remove the air bubbles
  • With the help of the measuring spoons take the mango base and pour it into the Calcic bath
  • Leave into the bath for about 2 minutes
  • Remove with a collecting spoon
  • Clean with a clean water bath
