9 a 15 % de humedad, mínima actividad de agua, resistente al horno y congelación.

Granulometría: 6 - 10 mm.

Aplicaciones:
Para incorporar a una receta de panettone, de pan y muy recomendado para realizar un grajeado de chocolate con baño de chocolate en turbina (bombo).
NO SE RECOMIENDA EN MASAS CON UN ALTO NIVEL DE HUMEDAD.
